Egg salad sandwiches - so easy it's not even really a recipe

I'd been meaning to try this for years and finally got around to it.

I hard boiled six eggs then shelled and mashed them with a fork, after discarding all but one yolk (and I'd bet you could easily discard all the yolks and still get great results).

Added silken soft tofu instead of mayo to bind it (only took about two tablespoons) and then Dijon mustard, fresh lemon juice, and some celery salt to taste.

I spread it on toasted potato bread, sprinkled with paprika, and it was fabulous.

I was actually making this for company with a bunch of other finger sandwiches and it fooled everyone. The mustard easily gave it enough color to replace all the yolks.
