Gluten Free banana Bread (UK Weights)

Hi

I hope I don't offend anyone with the UK weights but as I am from the UK I am finding the cup system a little difficult to grasp!

4 Lrg bananas
1 tsp Vanilla extract
1/2 tsp Cinnamon
80gms sugar
1 tsp Xanthan Gum
1/2 tsp Cream of Tartar
1/2 tsp Bicarb
2 egg whites
280gms Gluten Free Four

I use Dove farm gluten free flour which you can buy from some large supermarkets & most health food shops,
Xanthan gum is used to put the "Elastic" back that is lost from not having any gluten & again you can buy this from health food shops,
You can replace the bicard/soda & cream of tartar with 1tsp of Baking powder,

I add the bananas/eggs/cin into a mixer bowl (kenwood chef)
mix for a couple of mins then add the rest of the ingredients & mix for a couple more mins, the mixture will lighten in colour a little,
What your left with is thicker than batter but not a dough if that makes sense!

This will fill a 2lb loaf tin, bake at 160c for 45mins (fan oven) others may need a little more cooking.

I am not a Coeliac but gluten in large quantities like bread I am intolerant so I steer clear of it, but its not a problem in tiny quantities
