Gingerbread recipe?

Every year for the past 12-13 years I have all my neices and nephews over to make cookies for Santa and make "faux" gingerbread houses. With my kids included it's 12 kids. The 2 oldest are 18, but they still enjoy the sticky fun time that we have.

We've always made the "faux" gingerbread houses with chocolate graham crackers. One because I don't have to cook them and 2 because not all kids like gingerbread. Last year my son who's now 15 decided that we really need to make real gingerbread houses this year. He found the cookie house cutters online and hounded me until I finally bought them. Now I'm stuck making about 15 gingerbread houses this year (I have to make some for a few of the adults....decorating these is really a stress reducer and fun!).

I've looked up several recipes and all the traditional gingerbread calls for molasses. I'm thinking this isn't IBS safe. Does anyone know? Anyone have a recipe they can recommend?

Btw- I don't want to use the box mix because I'd need 100 boxes of it. And because it stays too soft and the houses would fall apart.

I'll have to remember to thank my son for this when he gets older.......can't wait until he has kids! LOL
