Irritable Bowel Syndrome Message Boards | Half Batch (8x8 pan) Antidepressant Brownies

I made the 9x13 pan recipe of Antidepressant Brownies found in the recipe index (posted by TessLouise) and REALLY liked them, but I wanted a downsized version and I hadn't seen one here yet. I adjusted the recipe for a half batch and cooked them in an 8x8 pan and they turned out great. Hope you enjoy them!

Antidepressant Brownies � Half Batch (8x8)

1/4 cup + 2 Tbl unsweetened cocoa powder
1/4 tsp baking soda
2 Tbl + 2 tsp oil
2 Tbl + 2 tsp applesauce
1/4 cup boiling water
1 cups sugar
2 egg whites or 1/4 egg beaters
1/2 cup + 2 Tbl + 2 tsp flour
1/2 tsp vanilla

Preheat the oven to 350 degrees.

Grease a glass 8-by-8-inch baking pan.

In a large bowl, stir together the cocoa and baking soda. Blend in the oil, and mix until smooth. Pour in the boiling water, stirring until the mixture thickens. Now stir in the applesauce, the sugar, and the egg whites. Mix until smooth.

Add the flour and the vanilla. Blend completely--there should be no lumps. Now pour into the greased baking pan. Spread the batter evenly to avoid crispy edges.

Bake for 25 minutes or until toothpick inserted in center comes out clean. (May need to adjust baking time if not using a glass pan.)

Let cool and cut into squares - or eat them warm right out of the pan like I do!
