Cool Whip Light is probably okay doable but here's an old post on explaining what's in it so you can double-check: web page

I'm not sure which graham cracker crust you made but I had good luck with this one: web page

As for having caramel it depends what's in the kind you're using. Recipes for caramel seem to call for butter and cream so probably not.
