Terrific Chicken Taco Recipe

Terrific Chicken Tacos

Marinade 1-2 lbs of chicken breast for 2 plus hours.

Marinade:
1/4 c. fresh orange juice
3 tbsp. fresh lime juice
2-3 tbsp. cilantro
2 oz. green chilies (1/2 of a 4 oz.can)
1 tbsp. (a large clove) garlic
3/4 teasp. ground cumin
1/2 teasp. salt

I put all the marinade ingredients in my mini food processor until the garlic and cilantro are in tiny bits. Pierce the chicken breasts several times with a fork before covering with the marinade. Then, put it in the frig for 2 of more hours.


Next, make your Tomatillo Salsa:
1 medium yellow onion, sliced into 1/2 inch rounds
10 medium tomatillos (golf ball size), husked and rinsed (if your store doesn't carry them fresh, look for canned. Drain them before using. And skip the grill, they're done.)

Take these to a very hot grill or grill pan strayed with Pam. Grill onion rounds until lightly charred, turning once. Also, turn your Tomatillos to ensure even cooking. They're done when completely soft and sweet.(Some may burst open. It's okay.) Note: Keep the grill closed as much as possible for better results.

When the veggies come off the grill, turn it down to medium and put the marinated chicken on! It will take 10-12 minutes, turning once. Let chicken stand a few minutes before slicing or shredding. While your chicken's on the grill, process your salsa.

Put the next 7 ingredients into the food processor and blend until fairly smooth:
grilled onion and tomatillos
2 oz. green chilies (the other half of the can)
1/4 c. cilantro
1 garlic clove
1/2 teasp. brown sugar
1/2 teasp. salt

We build our tacos with a tortilla (I layer two tortillas), soy sour cream, the grilled chicken, a little salsa, shredded lettuce and chopped tomato. The kids and Dad add cheddar cheese. I don't bother to substitute the cheese in this dish because it's terrific as it is!

If you want to add rice into your taco (making it more like a burrito), use white rice cooked in chicken stock with a pinch of cumin, salt and chopped black beans...yum. (Spanish rice doesn't sit well with me.)
