Ginger Rice

2 T grated, peeled fresh ginger
1 tsp sugar
1 tsp coarse salt
2 cups jasmine rice

Boil ginger, sugar, salt & 2 1/2 cups water to a boil in a medium saucepan. Boil for two minutes. Stir in rice. Reduce heat to low. Cover. Cook until water is absorbed 15 - 18 minutes. Remove from heat; let stand covered for 5 minutes.

*I tried making this in my rice cooker, it turned out okay, but tasted a bit too salty.
