I found one of those pans that makes about 6-8 small loafs. I just take one loaf out of the freezer and let it sit on the counter to thaw. When I make the larger loaf I did slice it first (used sandwich bags in a larger freezer bag) so I could thaw out a slice or 2 at a time.
