Most Duncan Hines cake mixes are safe (m)

if you'd rather use a cake mix, Duncan Hines recently went back to making most of their cake mixes dairy-free. They also include directions to make the cake low-fat (just make sure to use all egg whites if they ask for whole eggs).

There are some canned frostings that are safe ingredient-wise but have way too much fat ... so it's best to make frosting from scratch. I personally always just make modified buttercream frosting ... start out with 2 T all-vegetable shortening (no lard!), gradually sift in about 2 1/2-3 C powdered sugar while adding small amounts of soy/rice milk (about a T at a time) when it starts getting dry. Sift in 4-6 T cocoa powder for chocolate frosting. You will want to keep it refrigerated because stuff made with soy/rice milk spoils very quickly. I also notice that frostings made with soy/rice milk also have the tendency to "weep" into the cake and make it a little soggy on top, so I try to use as little milk as possible. You can also use fat-free non-dairy creamer although most brands contain a small amount of milk proteins (caseinate) that might bother some people.

If casein doesn't bother you, you can also just frost the cake with fat-free Cool Whip. If the cake is chocolate you can also sprinkle some crushed Newman-O's on top (these are safe too though a teensy bit high in fat) and maybe some colored sprinkles to make it a little more interesting and festive.
