Both the big ones and the long Japanese. When it is freshly picked it usually doesn't have that bitter taste so I don't salt and drain it. At this time of year, eggplant is probably imported and who knows how old it is. I usually don't like to buy out of season vegetables but this sounds so good I don't want to wait until summer.
