3/4 cup whole wheat flour (you can use white if nec) 1/2 cup flour 1/2 cup quick-cooking oats 1/2 cup sugar (use 1/4 brown and 1/4 white if you like) 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 4 (very) ripe bananas peeled and mashed 1/2 cup soy milk 2 egg whites 1/2 cup chopped walnuts or pecans extra oats -- as much as you want
Preheat oven to 350°F. Grease an 8-inch square baking pan.
In a large bowl, combine flour, oats, sugar, baking powder, baking soda and salt. Combine bananas, soy milk and egg whites in a blender or mix with an electric mixer in a medium bowl. Add to dry ingredients just to blend. Stir in walnuts, if desired. Pour into prepared pan and top with "extra oats" and bake for 30 minutes, or until done. Cool on a wire rack.
