Potato Salad - Old German Revised

I have never posted a recipe before, but this came out so good I just had to share. (My adaptation to an old bacon, sautee the potatos & onions in the bacon grease German recipe!)

4-6 med. red potatos
2 slices turkey bacon cooked well done & drained on paper towel. Crush into small bits and pieces.
1/4 C. chopped onion (I use sweet or Vadalhia)
1 tbsp. oil
4 tbsp. wine vinegar
2 tbsp. water
S & P for boiling potatos and for flavoring marinade.

Cut up potatos in fairly thin slices. Boil in water until done with salt to taste.

Add rest of ingredients in microwave proof cup and microwave until just starts to boil.

When potatos are done, drain and toss in the other ingredients while potatos are still hot. Chill.

Enjoy!

I know some may not tolerate the wine vinegar etc. My trigger is fat, so a non-mayo recipe is great...(....I only like the "real" stuff, which I don't eat any more)!!
