Why do cakes sink in the middle?

This is not strictly IBS related, but I figured there might be an expert baker or two who could help me out. My cakes always seem to sink in the middle. Any ideas why? I just baked two 9'' round cakes, and wouldnt you know it, they both sunk in the middle. It's not like I always use the same recipe either...
