Why do cakes sink in the middle?       08/17/06 02:15 PM Edit Reply Quote steather Reged: 01/29/03 Posts: 345 Loc: Phoenix, AZ This is not strictly IBS related, but I figured there might be an expert baker or two who could help me out. My cakes always seem to sink in the middle. Any ideas why? I just baked two 9'' round cakes, and wouldnt you know it, they both sunk in the middle.
