Tried a Rachel Ray trick on this last night       02/05/06 08:15 AM Edit Reply Quote Sand Reged: 12/13/04 Posts: 4490 Loc: West Orange, NJ (IBS-D) I dusted the chicken breasts lightly with flour (used my small strainer as a sifter) before dipping in egg mix, then bread crumbs. It seems to make more of the egg mix adhere so there's more balsamic flavor and it makes the crust even crispier. Joe said it's the best version I've made.
