I just made the yummiest, easiest shrimp dish - I just had to share!!! I know a lot of people are not fans of mustard (I actually am not a big fan myself), but my husband is, so I had to try it for him. It turned out sooo good, and I don't even like mustard. Anyway, here is the recipe.
Shrimp with Mustard Sauce
1/4 cup finely chopped onion 2 garlic cloves, minced 2 teaspoons olive oil (I use extra virgin) 1/4 cup white wine or apple juice 2 Tbsp Dijon mustard 1/8 tsp pepper 1 pound uncooked shrimp, peeled and deveined 1 small tomato, seeded and diced
In a nonstick skillet, saute onion and garlic in oil until tender. Stir in the wine or apple juice, mustard and pepper. Bring to a boil. Reduce heat to medium-low. Add shrimp; cook and stir until shrimp turn pink, about 5 minutes. Stir in tomato; heat through.
This is sooo yummy - you all have to try it. I served it over rice...mmmmm
