It has been awhile since I made them but they were a little sweet. I like sweet cookies. Give it a try reducing the sugar the way you described. It can't hurt to reduce the sugar. You may just have to experiment with it. I think the pumpkin does take some of the sweetnes away but taking out a total of a 1/2 cup shouldn't be a lot. I realize I may not be too helpful, sorry.
