Trish - my hands are in bad enough shape without NOT using my bread machine. Sorry, but I don't have a hand made one except if you want to use 10 lbs of flour (which I don't think you do). That'll make enough for an army. You should get yourself a bread machine. They're just great. No muss, no fuss and no sore arms and hands afterwards! And, now they're pretty inexpensive. They've got them on sale all the time and you can buy a good one (value $250) for about $99. And, well worth it, too.
I don't think you can use a bread machine recipe to do by hand. The only other way to do it by hand is to let the machine mix and knead and do the first rise. Then take the dough out of the machine, form it into whatever shape you like (I like the little birdies) and then let it rise once more and then bake.
