I made this again last night. I wanted to mention the differences to how I made it last time. I used a rotisserie chicken and pulled off the meat, separating the white and dark, and mixed that in with the barley and pesto. I grilled the veggies whole or cut in half, real slow and then sliced. This way was easier. I also put some balsamic vinegar on the veggies with the EVOO. So that is I grilled 2 huge mushroom caps, a cut in half onion with roots in tact, a cut in half red pepper, and 3 halved zucchinis. It takes at least 30 min to make them tender! Anyway it is awesome! Make the "pesto" basil puree with some garlic, salt and a little oil and then as much broth as needed.
