Reged: 04/26/04 Posts: 1490 Loc: New York, New York If you are afraid of using eggwhites from eggs you crack yourself, you might want to consider eggology. www.eggology.com . They are salmonella tested and pasteurized, but they are 100% pure eggwhites, so they will behave properly in the recipe. I imagine that eggbeaters or other egg substitutes with colors and stabilizers might not work as well. I always buy eggology and I think it's great.
