Chicken Stuffed with Spinach & Parm/Roasted Potatoes

Makes 1 serving - double, triple, etc. as necessary.

Chicken Breasts Stuffed with Spinach & Parmesan Cheese

1 boned, skinned chicken-breast half (4 oz)
1/4 tsp olive oil
1/2 cup chopped fresh spinach
1/2 Tbsp grated soy Parmesan cheese
Salt and pepper, to taste

Heat oven to 400°F. Cut a lengthwise pocket halfway through center of chicken breast. Heat oil in a medium skillet. Add spinach; sauté until wilted.

Remove from heat; stir in cheese, salt and pepper.

Stuff into chicken pocket; secure with oiled wooden toothpicks.

Brush chicken with smidgen of olive oil & sprinkle with pepper.

Bake 20 minutes or until chicken is cooked through.

Remove toothpicks and serve.

Roasted Potatoes
1 cup chopped raw potatoes
1 tsp olive oil
Salt and pepper, to taste

Toss all ingredients in a small baking dish to mix and coat. Bake in oven with chicken 20 to 30 minutes until tender and golden.
