Avocado and quorn/chicken salad & wraps

I threw this together tonight as an alternative to Si's lettuce-based salad and it turned out pretty yummy. Quantities are rough to say the least. And, as always, watch the avocado if you're particularly sensitive to fat levels. You could also add any other safe salad-type ingredients that occur to you.

1 small California avocado
1/2 cup frozen peas
1 tomato
1 mushroom
Quorn or chicken pieces (or cooked chicken)
1 t Olive Oil
1 clove garlic, peeled and diced/crushed
1 t dried basil
A few leaves of fresh basil if you have it
Salad dressing of your choice
2 or 3 tortilla wraps to serve

- Peel and chop the avocado into roughly 1/2 inch cubes.
- Section the tomato and slice the mushroom. Mix in a bowl.
- Cook the peas (I do 1 minute in the microwave, stirring half-way through) and add to the bowl.
- Drizzle some salad dressing over this mixture.
- Heat the olive oil in a pan and cook the quorn/chicken in it with the garlic and dried basil until it's all golden brown (if you're using raw chicken then it will of course take longer).
- Add the fresh basil if you have it and stir.
- Add the garlic quorn/chicken to the salad bowl.
- Eat with/in the tortilla wraps.
