Crystallized ginger is bite-sized pieces of ginger that have been preserved in sugar, you can see the sugar crystals covering the ginger, probably the reason for the name. I have bought it in HFS and supermarkets - you could try looking at the baking ingredients, near the candied fruit, glace cherries, etc. Chinese stores may stock it too.
You can chop it up and add to cake recipes, take it on journeys as a convenient remedy for nausea, or just eat it like candy - candy with a bit of a kick!
Don't confuse it with ginger in syrup, which is also good but better used as a topping for desserts, fruit, etc.
