Even so, you will likely leave some of the core behind, depending on the type of apple ... But what you did would work fine if you covered the apple with some foil. Or you could put the pieces in a small ovenproof dish with a lid, you could add a little honey/water/lemon juice - to taste - to stop it drying out. Bonus is it will cook a lot quicker than the whole apple, but downside is you can't stuff the empty core with something delicious. Just make sure you don't eat the skin!
