Question about Crock Pot Cooking

Hi ya'll,

I have been having a really hard time getting home from work and then having time to make and eat dinner before I need to go out again, or go to bed!
I want to try some crock pot recipes (the one I want to try next is the Garlic Brown Sugar Chicken) but it says that it should cook for 6-8 hours. My problem is, I leave for work at 6:30 am and don't get home until after 5... Can I leave something cooking that long or will it overcook or dry out or something? 10.5 hours is a pretty long time...

Any suggestions?
