I like using dried oregano in mexican cooking. I would add a teaspoon. Ground coriander would be good too. Also I think cumin is really necessary. I would add 1t. However keep in mind that I spice things up alot. Nevertheless without a jalapeno or something like that I don't think your spice rub could be too spicy! Good luck.
