I made this tonight to go along with my meatloaf...it was VERY good... Shane took care of what SHOULD have been leftovers...LOL Guess he liked it!
Shell's Shiitake Mushroom Basmati Rice Makes 4 servings
1 tablespoon olive oil
1 cup chopped shiitake mushroom
2 tablespoons minced shallots
1 clove minced garlic
1 (14oz can) vegetable broth
1/2 teaspoon white pepper
3/4 teaspoon salt
1 teaspoon parsley
1 cup basmati rice
Heat olive oil, mushrooms, & shallots in a medium saucepan, oven medium heat 2-3 minutes. Rinse rice 2 times and then add to pan along with the balance of ingredients. Bring to a boil, cover, reduce heat and simmer 20 minutes. Fluff with fork.
