Rice Noodles with tofu, olives & sundried tomato sauce

I made this for a few days and had the sauce with rice noodles & polenta. I imagine a baked potato would also be a good option with it. This made 3 servings for me...

1 tin tomatoes
4 sundried tomatoes (obviously dried ones, not in oil!)
6 kalamata olives (again, you get these in bubble packs, so they're not in oil)
1/2 tbsp extra virgin olive oil
salt, pepper
1 sundried chilli (optional)
1 packet (150g) marinated tofu
pinch dried basil
1 clove garlic, finely chopped

1 portion rice noodles/polenta/pasta/potato/rice etc
........................................................................................................................
heat the oil and gently cook garlic
add all other ingredients and simmer until tomatoes have dissolved and tofu is cooked.
serve with carbohydrate of choice.

I realize tomatoes might cause some people problems, but I was fine with this.
