I was just going to clarify some things with this recipe. First of all just put in some sake and soy sauce with the breasts to marinate. Then soak some mushrooms if using dried (fresh or canned Asian style mushrooms work- use plenty of mushrooms). Chop scallions and mushrooms and set aside. For napa cabbage- just coarsely slice the leafy parts of a whole head- it will cook way down- and there is no need to use the stalks. Mix the soy, sake, sugar and pepper with plenty of cornstarch. Cook chopped chicken with spray and remove and then cook egg whites-I used 3. Then add dried mushrooms and garlic and ginger, then fresh mushrooms and scallions, then add cabbage and sauce. Stir and cook til thick and add chicken. I just used flour tortillas tonight but the mandarin pancakes are very good. Smear some hoisin on a tortilla and fill. Serve with white rice. I don't find napa cabbage to be too gassy but it definitely could be. Otherwise the meal is safe and low fat.
