I was planning on icing it with something like this, since that other one is soooo high in fat. It scares me. Lower fat Cream Cheese Frosting 8 oz soy cream cheese 1 c Marshmallow cream 1 ts Fresh lemon juice 1 ts Vanilla extract 1 c Powdered sugar In a medium bowl, stir together the cream cheese, marshmallow creme, lemon juice and vanilla until well combined. Then gradually beat in the powdered sugar.
