SALMON BAKED IN POTATO SHELLS

1 lb. canned salmon
8 med. BAKED baking potatoes
1/2 c. soy or rice milk
1 chopped onion
Salt
Pepper
1 c. bread crumbs
2 tbsp. butter sub

Flake salmon removing all skin and bones. When potatoes are cool, cut in half and scoop out centers. Mash thoroughly, adding soy or rice milk, onion and seasonings to taste. Add salmon. Mix lightly. Stuff mixture in potato shells. Cover with crumbs. Dot with butter sub. Bake in 400 degree oven, 25 minutes. Serves 6 to 8.
