ZUCCHINI BAKE w/Tuna or Salmon

ZUCCHINI BAKE

4 c. sliced zucchini, 1/4 inch slices
1 c. chopped onion
1 1/2 c. shredded soy or rice cheese (original called for Cheddar)
2 cans (6 oz.) drained tuna or salmon

In separate bowl mix:
3/4 c. eggbeater or 6 egg whites (equiv of 3 eggs)
1/2 c. canola oil (you might be able to use a little less)
1/2 tsp. oregano
1/2 tsp. pepper
1 tsp. salt
1 1/2 c. RF Bisquick
1/8 c. soy or rice milk

Add all ingredients together. Spread in 8 inch baking pan. Bake at 400 degrees for 30 minutes
