Heres a yummy one! You can cut it in half if you don't want to make this much!
1lb small red potatoes-washed and partially peeled(one or two swipes around the middle with a knife or peeler) 1 TBS butter(I use rice butter substitue) 1 TBS snipped fresh chives S & P to taste (I also add a little garlic!) In microwave safe bowl, combine potatoes, S & P, and 1 cup water. Cover bowl with plastic wrap and cut a slit in top to vent.Cook on high for 20 minutes, every 5 minutes stop and stir to evenly haet. Add butter and chives to hot potatoes, toss gently intil butter melted and all water is absorbed.
