black bean and avacado sandwhich

I eat this sandwich sometimes as an alternative to turkey or chicken (which I get tired of)

I buy a can of Black Beans (make sure the only ingredients are black beans, water, and salt)
I rinse the beans to get off a lot of the sodium.
I pour about a 1/4 cup on a plate, and microwave for about 2.5 minutes. Then I add a dash of dried cilantro, pepper, and salt and mash them up really well with a fork to help with the insoluble fiber of the skin. I also add a tiny bit of olive oil and water to help make them creamier.

In the meantime I am toasting 2 pieces of French Bread (to keep the bread soft, I usually pop them in the oven on broil for a few seconds, instead of using the toaster)
Then I spread the beans on one bread and cut up 1/2 an avacado on the corresponding piece of bread.

I add baby spinach leave (I can tolerate these if I rip off the stem)
I also slice up a little bit of a roma tomatoe (because I seem to be able to tolerate tomatoes in small quantities)

If you can't tolerate spinach or tomatoe, then it taste good with just the beans and avacado.

I usually eat this with a mango smoothie.
