Irritable Bowel Syndrome Message Boards | Substitution Questions and General Questions

I have some questions that I compiled while re-reading the IBS Cookbook. Maybe someone can help me on these. Here goes.
1. Is there a substitute for carob powder?
2. Rose's Lime Juice - Who is Rose??
3. Can Bruschetta/White Bean Dip be served with baked chips?
4. Is baguette and French bread the same thing?
5. Could you use hake or mahi mahi fish for the smoked whitefish dip?
6. p. 62 Grilled shrimp shisk kebabs - could you add potatoes and carrots to this recipe?
7. Mushroom crab dill omelete - could you add tunafish or shrimp instead of crab?
8. p.112 Gingerbread - could this recipe be adapted to cookies?
(General note/thought - I thought the simple sweet cornbread might go good with catfish)
9. p.129 raisin stuffing - can you use canned cranberries? Where can you find fresh cranberries?
10. Tangy thai salad - could you use a baked potato instead of sweet potato?
11. Roasted potato cider salad - can you use baked potato instead of sweet potato?
12. Sandwiches of rosemary - can you substitute mango chutney for the chutney?
13. Sizzling shrimp fajitas - could you use fish or chicken instead of shrimp?
14. Mustard dill salmon - can I use green beans instead of greens?
15. Indian curried potatoes - could you add chicken breasts?
16. Lo Mein - can you leave out the ginger and gingerroot?
Thanks. I think my faorite recipes are the ones for chicken breasts and vegetables/fruits - such as with peaches, carrots, etc. Also like many of the fish recipes. I appreciate the help.
