I've been on a strict EFI diet for the last week, with similar symptoms to what you're experiencing (constipation, gas, bloating). I'm starting to discover certain triggers for myself as my gut stabilizes. I now realize that garlic and pears make me feel worse, but peas do not (as long as they are eaten after lots of SF). I don't think you will find any overnight fixes to the gas and bloating. I'm starting to see an improvement as I follow the diet, and use the tummy fiber in a low dose as directed. I've also discovered this week that moving around is key to helping with gas. After eating a peeled pear (after my high SF lunch) and ending up almost doubled over with gas, I made a decision to find activities that required standing and moving around for a while. I even went for a walk with my dog. It helped tremendously. Yoga stretches can help move gas through as well. Try ones recommended by Heather as a starting point. The fennel tea really helps with gas too.

Above all, I'm starting to learn it is about patience. Stick to the EFI diet (and avoid anything else you know you should) and don't expect it to help you feel completely better right away. It's slow. I will tell you that compared to how I was feeling last Saturday, I've made noticeable progress. Good luck!
