Help!! Gluten-Free and Vegetarian?

Mentioned here that I had my gallbladder out about 3 weeks ago. I was feeling so much better and the surgeon suggested that I try some cheese. She was feeling that it was my gallbladder and not IBS. I didn't seem to react for the first few days and then wham, had an attack on Monday. So dropped the dairy and I had another attack Thursday. Both lasting 5-6 hours and Monday's included bleeding. I met with my holistic dr. today to go over tests that she ran before the surgery. One test she did was a stool test. It came back showing my good bacteria is really low so she's having me double my probiotics. I also have very high antibodies to gluten, so I'm going gluten free, and I have to start taking digestive enzymes because nutrients are not being absorbed very well. She doesn't think the dairy set me off and is worried about me getting enough nutrition being vegan, so she wants me to try dairy again while getting rid of gluten. All I keep thinking is how I feel like a freaking guinea pig. Any suggestions?
