The soluble fiber fruits and veggies are going to be the safest, of course, and some (like broccoli and cabbage) are generally on the "difficult" end of the spectrum, but not impossible. There's no such thing as a categorically "unsafe" veggie (well, ok, unless it's fried - haha).

*But* - people's tolerances are an individual thing. I can eat vegetables that a lot of people can't, but some people can still eat things that I can't. You may find that in some cases, but unfortunately, it's all trial and error. If you're cooking and pureeing, you're doing it in the safest way possible, at least.
