100 grams of beetroot contains 2.5 grams of fibre of which 1.2 grams is IF and 1.3 grams is SF.

I boil the roots until tender. I remove the tops but I don't remove the skins or cut the tails of the roots until cooked. When cooked I rinse them in cold water. I squeeze the roots between my fingers to remove the skins and then tail. Watch out they can be pop out of your hand

Serve cold or hot. I like to sprinkle mine with salt, pepper and pickling vinegar.

I use to eat the tops too. I prepared them like cooked spinach. I believe there is more IF in the tops than the roots so I tend to stay away from them these days.
