few leeks or onions
garlic
3 large yukon gold potatoes peeled and diced
salt and pepper and bay leaf
2 1/2c rice milk
1 1/2cans stock or water or mix
8 small cod fillets or a few servings or however much you want
soy creamer
1/2 package turkey bacon chopped
parsley
can also add corn, carrots, parsnips
In a stockpot with spray saute leeks and then add garlic, do not let burn. Add the potatoes and milk and stock also salt and pepper and bay leaf. Cook until potatoes are tender and add cod. Cook until cod is cooked through- a few minutes- then add soy creamer to taste. Meanwhile in pan (cast iron if possible) brown bacon on medium heat. Top soup with some bacon and parsley. I put corn in mine but DH didn't want any.
