Maltodextrin is a hydrolised starch from any sources that contains less than 20 glucose molecules stuck together. Essentially it is a long string of glucose (a sugar) molecules and contains nothing else.

What is the problem with dextrin from wheat? If you are worried about gluten Benefiber is gluten free.
