Custard style SOY cheesecake

My mom used to make this for family functions, but with whole milk, dairy cream cheese and eggs! Yikes! It was good though. I've made substitutions, so we should all be safe.

Blend together:
8 ounces soy cream cheese
3 teaspoons vanilla
1 cup Egg Beaters
3/4 cup sugar

Separately, bring to a boil:
1 1/2 cups soy milk
(Add 3 tablespoons Cream of Rice when milk boils. Remove from heat. Continue to stir as it cools; it tends to get quite thick otherwise.)

Keebler "2 extra servings" 9 oz graham cracker pie crust

Blend cooled Cream of Rice into cream cheese mixture. Pour into pie crust. Bake in preheated 400 degree oven for about 40 minutes or until top is light brown.
