Does anyone know a safe chicken salad receipe? I've been craving it this week and was hoping someone had a safe recipe.

Hi - I don't have one typed up, but if there's a recipe you have that looks good the odds are the only substitution you'll have to make is fat free mayo for regular, or soy yogurt for dairy, etc.
I found some tasty-sounding recipes on line at epicurious.com, which is usually pretty reliable. Here's a curry chicken salad
Just sub for the mayo and dairy yogurt, and make sure you have some type of soluble fiber base with the salad (you might want to use the salad as a sandwich filling).
Here's a chicken and roasted veggie salad that has too much olive oil but otherwise sounds good. Drop the oil down to 2-3 T and increase the lemon juice so you have enough dressing.

No, I'll have to check it out. I ate some premade stuff that I've eaten before and it didn't bother me. Boy was I sorry. Good thing it was Friday night and I no plans. Thanks for the suggestion Kerrie.

Thanks Heather! I'll have to check those out too. The temperature here is already in the low 90's so hot lunches are sounding less and less appealing.
