Apricot Chicken from the Food Network

This recipe comes from Rachel Ray's 30 minute meals. I've become a recent addict of the food network, so I plan to start posting a lot of my own new recipes

We made this for dinner tonight and served it over brown rice. It was great!

2 tablespoons extra-virgin olive oil, 2 turns of the pan
2 pounds chicken tenderloins, cut in 1/2 across on an angle
Salt and pepper
1 large onion, chopped
2 tablespoons cider or white wine vinegar
12 dried pitted apricots, chopped
2 cups chicken stock
1 cup apricot all fruit spread or apricot preserves
3 tablespoons chopped flat-leaf parsley, for garnish


Heat a large skillet with a lid over medium high heat. Add oil and chicken. Season with salt and pepper. Lightly brown the chicken a few minutes on each side, add onions. Cook 5 minutes. Add vinegar to the pan and let it evaporate. Add apricots and stock. When stock comes to a bubble, add preserves and stir to combine. Cover pan, reduce heat and simmer 10 to 15 minutes. Serve chicken with a sprinkle of chopped parsley.

I made this for dinner the other night. It was very good. I was kind of surprised because I expected it to cook down to a glaze but you simmer it with the lid on so you get a broth-y type liquid instead.

The recipe as given serves 6 so I used 2 boneless, skinless chicken breasts cut in 5 or 6 pieces each and halved all the other ingredients. Except the dried apricots - I used about 9 of those.

It looks kind of odd as you're making it but it smells heavenly and tastes yummy once you get it done.

I served it with white rice.

This was fantastic!! So easy, so tasty. I used Apple Cider Vinegar since I have that around to make cornbread with, and it was SOOOOO good. Thanks for sharing!
