Does anyone have any suggestions for a good chicken marinade? Specifically one that I can grill with?

Marinade for grilled meats or veggies
(Makes 1 cup)

This is my favorite marinade! I almost always use it on chicken breasts. Since Kelly informed me that it's okay to have marinades with more oil than we'd usually cook with, I feel safe sharing it! It certainly has never bothered me.

1 Tablespoon brown sugar
1/3 cup sesame oil
1/3 cup soy sauce
1/3 cup rice wine vinegar
2 cloves garlic, crushed and minced finely
1/4 inch fresh ginger, grated
black pepper
chili pepper flakes (I omit these)

1. Mix all ingredients in a container.
2. Use with your choice of Chicken breasts, Salmon, or veggies like zucchini or mushrooms!
3. Marinade for 2 or more hours.
4. Grill.
5. Enjoy!

Hiya,
I marinade chicken breasts in olive oil, crushed garlic, oregano and squeeze in some lemon juice and it's yummy. We do that for kebabs, and then cook 'em over the bbq and it's my favourite meal.

Mmm... that sounds a lot like chicken souvlaki. Yummy.

Have you ever tried Chiavettas? It's really good and has no fat in it.

A really delicious one for the BBQ is a mixture of honey, mustard, fresh parsley, a splash of white wine vinegar and lots of crushed garlic! The honey caramalises on the barbeque and goes all squidgy and lovely.

I love barbeque season, as its the one time when you can do lots of gorgeous grilled fish and chicken.

Hope you enjoy it!

I reccomend a low fat variety that is natural -- with ingredient such as olive oil. But any will do. You can also inject your chicken to make it extra juicy and tender.

Also, cilantro and lime mixed with a bit of salt and white pepper and a dash of EVOO makes a great marinade. BTW, Lemon and lime both tenderize meat, as does ginger.

Maybe this is a stupid question, but what's a Chiavetta? I'm really interested to know. Thanks.
