I came across this great looking recipe in one of my low fat cookbooks and wanted to share it with you all. I have not tried this one, so if anyone tries it before I do let me know how it is.
Tofu Berry Brulee
11 0z package of soft tofu
3 tbsp confectioners sugar
1 1/2 cups red berries, such as raspberries, strawberries or currants
aprox 5 tbsp raw sugar

Place the tofu and confectioners sugar in a food processor or blender and process until smooth.
Stir in the fruits and spoon into a 3 3/4 cup flameproof dish. Sprinkle the top with enough raw sugar to cover evenly.
Place under a very hot broiler until the sugar melts and caramalizes. Chill before serving.

3.01 g fat
0.41 g saturated fat

1.31 g fiber

Sounds fantastic - and simple, too. If I can get out this weekend to scout out the farm stands, and get some fresh local berries, I will DEFINITELY be giving this one a try!

Two questions though...

1 - How many servings? Or is that the calorie/fat count for the whole thing? (Doesn't seem possible, heh.)

2 - A general question for anyone with more tofu experience than I: how long would this last in the fridge, do you think? I'd basically be eating it all myself - I doubt my boyfriend will eat it - so I'll have to figure on halving it if it doesn't keep well.

Thanks!
