Peas and Peanut Slaw

I love this recipe. I've made it for a hundred years, and it always goes fast. Because of all the great seasonings, you can use fat-free mayo, and it still tastes YUMMY! It's supposed to serve 6. Yeah, right.

PEAS AND PEANUT SLAW

20 oz. frozen peas
8 cups finely shredded cabbage
3 large green onions, thinly sliced
3/4 cup fat-free mayo
1/2 teaspoon salt
1/2+ teaspoon curry powder
Dash pepper
2 teaspoons prepared mustard
2 teaspoons wine vinegar
1 1/2 cups salted Spanish-style peanuts

Turn peas into collander and run hot water over them to thaw; drain well. In large bowl combine peas, cabbage and onion. set aside. Combine mayo, salt, curry powder, pepper, mustard and vinegar; pour over cabbage mixture and mix lightly. Cover and chill for several hours. Before serving, stir in peanuts.

Serves 6.

Hi Bev,

This recipe looks exotic and interesting! I would like to try it but I have one question.

What is Spanish-style peanuts? Is that different from regular salted peanuts you get at grocery stores?

Oh yeah, absolutely. You don't want regular peanuts, no no. The can will definitely say, "SPANISH-style Peanuts." They're smaller than peanuts and much more flavorful (in fact, to be honest, I use the whole can!).

I just had this for lunch just a few minutes ago with a little sourdough bread. YUMMMMMMMMMM. (Okay, so I now have a little gas -- but no big deal.)

Oh, OK. I have never even noticed this kind of peanuts before, but it's not like I have been paying a lot of attention to peanuts either.

I will find spanish peanuts for this recipe.
