Easy Garden Bake

Easy Garden Bake
(Makes 6 servings--although my family got barely over 3!)

This is a light and delicious dinner. It's so simple to make, and it's a great way to eat your veggies!

Ingredients:
1 cup chopped zucchini
1 large tomato, chopped
1 medium onion, chopped
1/3 cup grated parmesan soy cheese
1/2 cup reduced fat Bisquick baking mix
1 cup soy milk
1/2 cup Egg Beaters or 4 egg whites
1/2 teaspoon salt
1/8 teaspoon pepper

1. Heat oven to 4oo degrees.
2. Spray a 9-inch pie plate with non-stick cooking spray.
3. Layer zucchini, tomatoes, onion, and soy cheese in pie plate.
4. Stir remaining ingredients until blended.
5. Pour into pie plate.
6. Bake 35 minutes or until knife inserted in the center comes out clean.
7. Cool 5 minutes.

I didn't peel mine, because I've never had a problem with zucchini skins. If you'd feel safer with it peeled then go ahead and do that. I'm sure it would work just as well either way!

Kree, I just make this "Impossible Pie," but I substituted FINELY-chopped broccoli for the zuccini (I'm no fan of zukes). It came out yummy.

I used to belong to the Bisquick Recipe Club, and I forgot about all my old recipes (I have a bazillion of 'em, all of which are in storage). When we move, I'll have to pull 'em all out and try them again.

As I recall, back 100 years ago this dish was called "Impossible Pie."

Bev, you're right, I've seen a ton of variations on the whole "impossible pie" theme... although I think the Bisquick people have changed it to "Impossibly Easy Pie" now. They even have tons of different ones on their website. I've enjoyed every one I've tried! I'd love to get yours, too... so hurry up and get them out of storage!
