Louise, I found these couple of recipes for you.
Sweet Chilli and Ginger Whitefish
serves 4 4 pieces of whitefish 1t sesame oil 2 cloves crushed garlic 1T minced ginger 1/4c lime juice 1/3c sweet chilli sauce
Top each piece of fish with some combined garlic and ginger.
Heat oil in non stick pan.
Cook fish topping side up for 2 minutes or until golden on underside.
Combine 1T each of lime juice and chilli sauce and drizzle over fish.
Carefully turn and cook a further 2 minutes.
Remove and keep warm.
Add remaining lime juice and sweet chilli sauce and and bring to boil. Cook 1 minute.
Serve with rice and steamed carrots and or beans. Pour over extra sauce.
Soy glazed salmon serves 4
1/2c soy sce 2T honey 1T minced ginger 1/3c lime juice 4 salmon fillets 1T olive oil 2 cloves crushed garlic small bunch english spinach 2 large carrots, thinly sliced 1t extra soy sce
Whisk together soy, honey,ginger,lime juice.
Place salmon in shallow non metallic dish and pour on the marinade. leave 8 minutes
Cook fillets under hot grill basting, for 8-10 minutes or until fish cooks through.
heat wok over high heat and add oil.
Add garlic and stir fry 30 seconds.
Increase heat and add carrot, stir fry an extra 4 minutes.
add extra soy sce and spinach and stir fry 2 minutes or until spinach is wilted.
Serve salmon over the vegetables accompanied with rice.
