Breakfast Burritos

Hi all - here's one I haven't tried yet:

BREAKFAST BURRITOS
Prep time = 15 min
Cook time = 25 min
Servings = 4

1 lg tomato, peeled and diced
veg cooking spray
2 tsp finely chopped basil (or 1/2 tsp dried)
1 c Egg Beaters
1 med potato, peeled and shredded (~1 c)
1/8 tsp ground black pepper
1/4 c chopped onion
4 - 8" flour tortillas warmed
1/3 c shredded soy cheddar or mozzarella cheese

In small bowl combine tomato and basil, set aside.

In lg nonstick skillet, spray with cooking spray, saute potato and onion until tender. Pour Egg Beaters into skillet, sprinkle with s/p. Cook stirring occasionally until mixture is set.

Divide egg mixture evenly between tortillas, top with cheese, fold tortilla over egg mixture, top w/tomato mixture.

This is the kind of recipe you can change to fit your needs or tastes. You could also top with soy sour cream and salsa and maybe a little guacamole, too. I'm making myself hungry!

We can have mozzerella cheese? Or does this mean either cheddar cheese or mozza cheese both of which are soy?

Sorry to ask dumb questions LOL, but I am so excited if mozza is ok!

Sorry, but I'm pretty sure Sharon meant "either cheddar cheese or mozza cheese both of which are soy." Regular dairy mozzarella cheese has all the triggers of every other dairy cheese, sorry.

No way for nothing! If you CAN eat soy...you're VERY lucky--enjoy the mozz./chedder soy cheese (uless of course you hate it). I can't eat soy OR dairy cheese...and rice cheese isn't Kosher...so I'm left with no dairy. Enjoy what you can (hope this brightens your day...I try to look at the positive side of things to cheer people up. As for me...I can't eat any tpe of cheese right now...but on the up side, I've discovered white sweet potatoes...and they're VERY YUMMY)! Have a great day! *hugs*

Can't remember the brand (might be SoySation?) but it's really good. I've had the cheddar and American flavors. I've seen it at Fred Meyer health food stores.

You Americans have all the health food stores. We small country Canadians are left with only a handful of the stores. And then they don't even carry very much of anything.

I actually get really frustrated sometimes in trying to find all these foods that we don't have anywhere. Does anyone know if there is a website that you can order off of that will enable us Canadians to enjoy all the American foods? Also - does anyone know if its a good idea to order your food off the internet?

Lana - if soy cheeses agree w/you, then soy mozzarella is okay.! SoyaKaas is really good, too!

No offense - but the soy cheese smell terrible and taste even worse. They are so sticky too and they are not good in general. I have now opted to not have any cheeses - which is fine with me!
