Lana - you're not buying the right kind. All of the soy cheeses I have purchased feel and look just like the real thing, especially the mozzarella. Sorry you feel like that. I can't smell, so I don't know what they smell like.

The kind of mozzarella I get is rice cheese, and I can't even tell the difference between it and regular. It's really good. We use it for pizza & mozzarella sticks. Now, the cheddar on the other hand, I'm still working on!

Sharon,

I made these Breakfast Burritos for dinner last night they were wonderful. I added mushrooms because I love them but everything else was the same. Even my husband loved them, which is a big surprise because he is into high fat foods. This is the second recipe of yours that he has liked! Maybe this will help with his cholesterol.

Tonight I made the Crispy Herb Baked Chicken, which you posted in March, it was great too.

By soy cheese sticks, do you mean "mozzarella" sticks? If so, I posted this recipe before, and they're really good. Baked Mozzarella Sticks

I've been wondering about casein... isn't this the protein in cow's milk that causes all the trouble for IBS'rs? If so than we really need to read labels because it is in many of the cheese alternatives. I have seen it in rice cheeses and in the almond cheeses. True Vegans steer clear of casein so if it meets Vegan requirements it should be free of casein...

Anyway, Heather, can you help me out to better understand casein and should I try to avoid it?
